Authentic Red Salsa
4 Chile Guajillos
10 Chile de Arbol
1 Garlic Clove
1 tsp of Dried Oregano
Salt to taste

Directions for our Authentic Red Salsa:
The first thing we need to do is roast the tomatillos. Typically, we use a comal for our authentic salsas but it is not necessary. You can use a griddle or grill them by placing a foil sheet underneath, as shown here:
Each tomatillo needs to roast evenly by rotating them frequently. The tomatillos will start to plump and juices will start to release. (about 15 minutes)
Next is the Chile Guajillo and Chile de Arbol. Be careful to roast the chilies lightly. Over-Chard will give you a sour taste, turning them every few seconds.
Once your done roasting, you will put the tomatillos (including the juice from the tomatillo) garlic, and Chile de Arbol in the blender or food processor. Add a few ounces of water to your container before blending. Blend until consistency is desire, usually chunky.
Once consistency is reached add the Chile Guajillo and salt. Again the consistency and texture will vary upon your taste.
Blend all the ingredients and add a pinch of Oregano.
Tip: to make it spicier had more Chile de Arbol or less if desire. Storing your salsa in a air tight sealed mason jar will last about 2 weeks in the refrigerator. Enjoy our great Authentic Red Salsa with our delicious Shrimp tacos with avocado cream sauce!
